This set of sasazushi includes three types of sushi: sockeye salmon, mackerel, and renkotai (sea bream), whose meat is soft, elegant, and slightly sweet. Matsuri-zushi" is a type of pressed sushi that was customarily eaten during festivals in Kanazawa. This set of sasazushi is a continuation of that tradition.
